A Mug Cake a Day...

Anyone who spends a lot of time with me knows I have an extreme sweet tooth. I love sweets so much that my unofficial life motto is "gotta eat sweets to stay sweet!" Some would say it’s problematic to consume a lot of sweets which I can’t argue with so I’ve begun to master the art of moderation. Recently, my sweet tooth has grown exponentially and I’ve been trying a new mug cake every night because creating a cake in a single serving is the epitome of moderation. I first tried a peanut butter chocolate chip cake followed by a chocolate chip cookie cake, chocolate mocha lava cake, brownie, and vanilla cake. I topped every single one with vanilla ice cream or frozen yogurt and sprinkles occasionally.
My favorite mug cake was the peanut butter chocolate chip cake, topped with vanilla frozen yogurt. I think I loved the combination of sweet and salty that the peanut butter added. And I felt guilt free after eating every single one because it wasn’t a huge serving and there wasn't an option for seconds!
Prep time: 5 minutes
Cook time: ~1 minute

Recipe:
3 tbsp peanut butter
¼ cup milk (I used unsweetened almond milk)
4 tbsp flour (I used Bob’s Red Mill GF flour)
¼ tsp baking powder
1 tbsp granulated sugar
3 tbsp semi-sweet chocolate chips
Instructions:
1. Add all ingredients except the chocolate chips in your mug and mix well until no lumps exist
2. Add in chocolate chips
3. Place in microwave for 60 seconds
Tips:
-Taller mugs are not necessary and don’t make for great photos (i.e. if you’re making this to post on social media/show off to friends try choosing a shorter mug)
-May have to cook longer than suggested to get desired consistency and based on the strength of your microwave. I recommend cooking at 15 second increments until it's at the perfect consistency
-If you want to make the cake in a mug but eat it on a plate, grease the mug first just like you'd grease a baking pan
-Any cake in a mug can be made in a ramekin if you prefer
